I love peanut butter and have not been able to eat it during the past few years, but I think that my stomach is healing and now I can finally handle some here and there! yay!!!

Ok, let’s get to the recipe! This is a very easy process if you have a high speed blender – I use my vitamix! Another thing that makes this recipe easy and successful is to buy your peanuts fresh and freeze them right away. Using frozen peanuts protects them from getting “cooked” on the vitamix and ending up with a thick dough like hot paste!😱😱😱
Quick Vitamix Peanut Butter😜
1 lb roasted unsalted Virginia peanuts (about 3 1/2 cups)
1/2 tsp “real salt” (Himalayan works great too!)
- Pour nuts and salt into the Vitamix container and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High, using the tamper to push the ingredients into the blades.
- In 1 minute, you will hear a high pitched chugging sound. Once the butter begins to flow freely through the blades, the motor sound will change from a high pitch to a low laboring sound. Stop machine.
- Store in an airtight container. It can also be frozen for longer storage.
